What is BISSAP?

BISSAP (beesap) is the general West African name for the beverage made from the calyces of the Roselle Hibiscus flower. Native to Africa, the Roselle Hibiscus is thought to have made its way to the Caribbean Islands in the early 16^th century and Asia by the 17^th century. It is a popular ingredient in many cuisines across the globe, and its most common use is as the tangy, red beverage made from its calyces.
